In the heart of Saint-Amour, Domaine de la Pirolette stands at the top of a hill, facing the church. Here, the 10 hectares of vines are gathered around the estate and the most emblematic plots are vinified separately, respecting the different lieux-dits.
The cellar is spacious, with ancestral grids for long vatting periods.

Saint-Amour AOP "La Poulette".
The vines are set on the climat "La poulette" on a pink granite soil with clay in the deeper layer. This plot-by-plot cuvée is aged in concrete eggs for 16 months. The nose is rich with aromas of berries (cherry, blueberry) and violet fragrances.

The vines are gathered around the estate with a South and South-East exposure. A nice fleshy fruit brings nobility to this Cru. The nose is rich with notes of gariguette strawberry, cherry and blueberry, and fragrances of violet, liquorice and white pepper.
